The House of Hennessy celebrates the pinnacle of cognac craftsmanship with a special limited menu created by culinary wizard Darren Chin. This dining experience will see fine cognac Hennessy Paradis Imperial pair up with an equally fine 6-course menu at DC Restaurant, crafted for gourmands to enjoy the heights of haute cuisine.

Chef-owner Darren Chin of DC Restaurant is handpicked by the House of Hennessy once again to create a limited special menu that mirrors the values of the maison, this time working with Hennessy Paradis Imperial.

Available from June 26 to July 31 every Tuesday to Sunday, this special menu (available for preview at the end of the article) celebrates the coming of two culinary forces, both driven by three pillars: the art of selection, the point of elegance and the relentless quest for perfection

Priced at RM998 per head, diners will experience a gastonomic flight of tastes and sophistication only two pinnacles of their respective fields can bring to the table.

Sensational Mini Tartlets

Our meal begins with intriguingly colourful tartlets paired with a refreshing glass of Dom Perignon 2009. From seafood the likes of sea urchin and ikura to more down to earth ingredients such as mushroom and beetroot, this collection of crispy crunchy treats made to whet the appetite do exactly just that and more, especially when taken with a glass of quality bubbly.

DC Restaurant's masterful use of Japanese sea urchin never ceases to amaze us and this next course doesn't let down, with an umami-rich punch that's balanced with a clever combination of truffled eggs and vegetable emulsion. Basically pure pleasure, this flavourful dish's only downfall is that it ends too quick.

Hokkaido Green Asparagus

Green earthy stalks of asparagus are complemented with a catch from local waters – Sabah bamboo lobster gratin served with summer truffle. The contrast between the bright and fresh chlorophyll taste of the asparagus and the sweet and briny flavour of the lobster go together incredibly well, but is made even better when sips of Hennessy cognac on the side make the lingering tastes in the mouth all the richer.

Darren Chin's homage to one of the world's culinary stars comes in form of a fillet of fish, expertly seasoned and cooked. With faux fish scales made of potato and a orange and wild flower honey sauce to enhance the natural flavours of the meat, this is a dish that may look aesthetically simple, but when eaten, couldn't be further from what meets the eye.

Definitely doing justice, Darren Chin's special menu to Hennessy Paradis Imperial is an exciting ode to the fine cognac.

This pairing of carefully selected quality ingredients at their seasonal peak with an exceptionally rare cognac celebrates, in Chin's own words, "prestige".

With DC Restaurant (winner of our Best Independent Restaurant), the House of Hennessy continues to foster a relationship with a talented chef that continues to push the Malaysian haute cuisine scene forward.
