Charcoal buns with salted egg yolk custard

A staple in Hong Kong styled dim sum menus, Chynna decides to reinvigorate the dish by adding charcoal powder into the bread dough to make a healthy detoxing combo that counters the heavy sweet and savoury salted egg yolk and custard filling.

Seemingly smooth in texture, you will be surprised with the chunks of yolk swimming in the golden custard mixture that adds dimension and bite to the palate. The hint tartness from the charcoal powder also helps mellow down the intense creamy filling.


Sizzling chive dumplings

More often than not, Chinese style dumplings are steamed or pan-fried, but at Chynna, the chefs decided to add a little visual performance to its dish by serving it on a sizzling plate on a bed of omelette.

Thanks to the flaming heat, the dumplings sport a crispy exterior that is packed with juicy chicken and prawns within. As you take your bite, do be cautious the fillings tend to explode in the mouth on your first bite.


Clay pot radish cake

Radish cake is another classic in the world of dim sum. However, there is always room for improvement and Chynna did just that. Instead of serving it on a plate, the radish cake is now served in earthenware, which helps retain the heat for longer periods of time.

Also, through the insulation of the pot, the flavours of the ingredients including chives, bean sprouts and radish cakes are enhanced with better fragrance and texture. Also, instead of stir frying the cakes, it is pan-fried to add a crispy touch to the dish.
