Same quality ingredients taken up a notch with a splash of bubbly is only the tip of the iceberg at the brunch.

Read on to find out more about what is in store for perhaps what is the most comprehensive Sunday brunch around town.

6- Mosaic salad bar.jpg -

Begin a wonderful Sunday with greens – the appetiser counter comes not only with a variety of international salads, which you are encouraged to build on your own, it also boasts cold cuts, Arabic Mezzeh dips, preserved cheeses and cured nuts, all ready to be nibbled with a selection of bread and antipasti. Laid next to each other, the raw ingredients make up a beautifully colourful sight that makes the idea of a salad highly appetising.

Move on next to the seafood on ice counter where a good selection of oysters, King crab, lobster and prawns await to tempt your tastebuds. Under the shells that are a robust colour of rich ruby red, their meats are juicy and sweet, a nod to their freshness. The oysters at Mosaic are nothing less than Fin de Claire oysters that present rich earthy flavour laced with an unrivalled sweetness. Also not to be missed are the baby scallops that are springy and incredibly easy to eat, with a natural salty-sweetness that goes amazingly well with champagne.

3- Mosaic mini bagels.jpg -

A brunch wouldn’t be a brunch without breakfast foods – look out for a delicious selection of mini bagels at the breakfast counter. A variety of small bagels half the size of your regular ones are stuffed with smoked salmon, cured, hams and roasted beef to make it really feel like breakfast even at 1pm. The sizes are perfect for tasting a variety of flavours and nibbling with champagne.

For something a little more traditional, waffles and pancakes are also available, prepared fresh by request. The batter is whipped, beat and poured onto the griddle in front of your eyes and become delicious, fluffy pancakes and waffles in a matter of minutes. Nothing like pancakes and waffles hot off the griddle for breakfast! Honey, butter, marmalades, jams, and even Nutella are some of the spreads available to drizzle and smear on your pancakes.

1- Mosaic roast beef.jpg -

A traditional Sunday brunch is typically characterised by a wholesome Sunday roast and Mosaic hasn’t overlooked that one detail. Its roast is a whole Australian prime rib, rubbed with nothing but a little salt so as to let its flavours speak for itself. Done medium rare, it slices like butter and melts in the mouth with a buttery juiciness characteristic of a well-prepared roast. On the side, honey-glazed root vegetables and Yorkshire pudding await to add a crunchy and chewy dimension respectively.

5- Mosaic bbq station.jpg -

More meat awaits at the live barbecue station. Lamb chops and beef steaks sit ready for your choosing, bathed in rich marinades and ready to be plopped onto the grill upon selection. What arrives at your table are piping hot perfectly-seared cuts that are prepared to your preferred rarity, all bursting with flavour veiled with a touch of smokiness.

7- Mosaic Lebanese.jpg -

For something more Eastern-inspired, the Lebanese food counter does not disappoint. Fragrant curries and fluffy breads are aplenty there with tandoori chicken, lamb kofta, and other distinctive tastes of the Middle-East. Pairing champagne with Middle-Eastern food will introduce you to a whole new world of flavours you’ve not explored before.

The Chinese counter also has its own array of delights to offer. Noodle soups will warm the stomach while traditional Chinese dishes like steamed fish and stir-fried meats will evoke the best flavours of home-cooked food. Surprisingly, we learn that champagne goes quite well with Asian foods too, especially the white meat dishes.

4- Mosaic desserts.jpg -

End the brunch on a high note with Mosaic’s assortment of dessert which heralds a whole section to itself for its vast selection. If a whole chocolate fountain – both milk and white! -- does not entice you, its colourful macaroons, rich cakes and indulgently gooey puddings of all types certainly will. They are all stacked beautifully on towering tiers, leaving you completely spoilt for choice.
