If anyone is excited about the dawn of a new year, Prego at The Westin is.

It has not only premiered a champagne lunch set during the weekdays, it has also revamped and brought back a bigger, better, bubblier version of its Sunday champagne brunch so it’s a reason for celebration all week long at the Italian restaurant.

Dubbed the Bubbalicious Brunch, every Sunday is now an all-you-can-eat affair to go with all-you-can-drink Moët & Chandon champagne.

The menu has also been revamped to reflect a new chef helming Prego’s kitchen, whose Italian roots and background are apparent in every bite of Bubbalicious’s dizzying array of food.

Between its counters of salads and seafood and soups, we found our allocated 3 hours at Prego’s champagne brunch hardly enough.

The most noticable aspect of the new menu is the unmistakable Italian touch to things. The salad bar boasts brown olives, sundried tomatoes, and cured peppers -- Italian staples you'll not miss at authentically Italian restaurants -- with which you are encouraged to build your own salads. The pickles are perfectly brined without the fruits and vegetables losing their colour so it presents a fun game of mix and match with explosive flavours and vivid colours that you can eat at the end.

A live Caeser salad station that tosses upon order will delight the salad-enthusiast. Just as the romaine lettuce is chopped and mixed with anchovies before your eyes, so do the eggs get poached and cracked atop your order right before serving.

Seafood on ice is not short, but Chef Vincenzo has cleverly selected only seafood that will go with champagne. Scallops, crab, and iced prawns as well as fresh oysters are the focus -- sweet white meat that will not overpower the delicate bloom of Moët's bubbles. The shells come off easily off the prawns presenting whole succulent flesh, and the crabs prove sweet and juicy under their immensely healthy-looking red shell. The scallops are clear crowd-favourites, with medallions being cleaned off faster than the waiters can replenish the counter.

The Italian influence reigns on at the antipasto section. White meats paired with white sauces serve as the highlight, like a beautiful fillet of seabass that goes beautifully down the throat with a small dipping of sour cream. Flavours vary from sharp and tart to mild and creamy. To really stretch the notes of your champagne, nibble on a slice of cured tomato topped with anchovy (the salty and sour combination will bring bring out the sweetness of your Moët) then calm things down with a slice of duck liver pate on toast (the creamy fattiness of the liver will stretch out the fruitiness of the champagne).

One of the best things to eat with champagne is, believe it or not, cheese. Its multi-layered textures and complex flavours really brings out different facades of champagne. Prego's cheese counter does not disappoint with generous blocks of a good selection of cheeses. The blue cheese is full-bodied and pungent (great for bringing the bitter-sweet notes of champagne to the forefronts), the brie, fragrant with a good bite, while the emmenthal is rightfully musky and milky all at once.

The menu has been crafted to prioritise foods that match champagne but red meat-eaters have not been overlooked. While grilled lamb, beef sausages, and mutton roasts are more suited for the heavy layers of red wines, Prego believes in having something for everyone. A live grilling station lets you choose your preferred cut of meat and cooks it up for you over charcoal fire so your meats come complete with the prized char and subsequent smoky flavour.

Seafood and vegetables are also available to be grilled; just take your pick, load up your plate, and the friendly waiters are ever ready and waiting to prepare your food as you like for you.

The food variety is staggering but you'll want to save space for dessert. Or don't, because the variety of all-time Italian favourites will do it for you upon sight. Pannacotas, creme brulee, and all sorts of tarts and sweet pies look invitingly tantalising even after all the food mentioned above. The must-try on our list is the Italian gelato that comes in traditional flavours like espresso chocolate chip and vanilla pecan. Rich, not too sweet, and satisfyingly gooey when you dig a spoon into them, they make the perfect Italian end to an equally Italian meal.

On top of the buffet, Prego's Bubbalicious Brunch also offers pass-around dishes that waiters will carry by your tables and serve to you to ensure the dishes are enjoyed as they are meant to be -- piping hot and fresh out the oven. Grilled seabass, a variety of pizzas, different pastas, and more will swing by your table every once in a while for you to choose.
