Shining the spotlight on must-have Chinese New Year ingredients, The St Regis Kuala Lumpur is serving a delicious 8-course meal to celebrate the upcoming festivities. We pay the hotel a visit and discover how classic ingredients receive a modern twist to fine dining standards. Start with a refreshing abalone and crispy soft shell crab yee sang, work your way through handmade dumplings, stir fried prawns and pan-fried dried shrimp radish cakes and end the meal with sweet potato nin gou and chilled pao sum tea.

1. Abalone & Crispy Soft Shell Crab Yee Sang

The hotel's take on this CNY must-have is half salad and half traditional yee sang, with fresh flavours working together with crispy soft shell crab and juicy abalone to whet one's appetite. But most importantly, eating this leaves you feeling light and hungry for more.

 

2. Braised Bird's Nest Soup, Crab Meat, Bamboo Pith

Soup is a must in every Chinese meal, and this next entry is a silky textured soup that tastes and feels nourishing. Made with only a few key ingredients for purer tasting spoonfuls, the crab meat and bamboo helps to sweeten the broth and is a refreshing break from double-boiled soups thanks to its slightly thicker texture.

3. Stir-Fried Prawn & Pan-Seared Dried Shrimp Cake

Most dim sum goers will be instantly familiar with this dish, but this Hong Kong staple is taken to new heights by infusing it with dried shrimp and topping it off with a garlic stir-fried prawn. Incredibly crispy and delicious, especially when taken with a dollop of chilli oil, this dish shifts the meal from light-and-balanced to the heavy-and-flavourful territory.

4. Handmade "Jiao Zhi" Dumplings

Building upon the last dish is a pair of dumplings, made with a generous filling of meat and chives and lightly spiced with a chillied oil broth base. Have it with diced ginger and vinegar to really enhance the taste of the already delicious duo. 

5. Steamed Stuffed Crab Claw, Fatt Choy & Egg Whites

Another symbolic ingredient during Chinese New Year, fatt choy is introduced to the meal in non-typical fashion – served atop steamed egg and topped with fish roe, stuffed crab claw and spring onion garnishing. A nice combination of textures and flavoures results in another winner.

6. Roasted Crispy 5-Spice Chicken With Lotus Chips

It wouldn't be Chinese New Year without a chicken dish, and this five spiced chicken roulade paired with tangy chilli and crunchy lotus chips is a wonderful alternative to typically being served the whole bird. Fragrant and succulent, it's hard to dislike the dish.

7. Rice With Supreme Fish Stock, Fresh Diced Scallops & Vegetables

Rice dishes usually come before dessert as a means to fill you up with a serving of carbs, yet the hotel cleverly serves a retrained serving of rice in a delicious fish broth to make for a simple yet flavourful end to the savoury portion of the meal. Full as you may be after six courses, this highlight shouldn't be missed.

8. Chilled Pao Sum Tea, Snow Fungus With Gingko & Crispy Sweet Potato "Nin Gou"

While the deep fried nin gou is appetising on its own, the chilled pao sum tea helps to wash away the oiliness of the dessert with light and floral tastes, making for a wonderful bookend to a hearty meal.
