Warm up

Prego Valentine - Sicilian Roasted Cherry Tomatoes Soup with Crispy Mazzara del Vallo Red Prawn and Basil Emulsion.jpg - cherry tomatoes soup

Diners will start their meal with a delicious antipasto – Sicilian roasted cherry tomatoes soup with crispy red prawn and basil emulsion. Tart, medium bodied, a tad sweet with a tinge of acidity, the soup is a great balance of the present ingredients. The crispy red prawn also provides a satisfying crunch element to the dish and adds a nice seafood flavour to complement the dominating taste of the basil and tomato combo.

Getting inked

Prego Valentine - Home Made Squid Ink Ravioli stuffed with Australian Red Snapper and Italian Burrata Cheese, Aurora Sauce, Dehydrated Leek and Caviar.JPG - squid ink ravioli

For the second course, diners are encouraged to share a tantalising homemade squid ink ravioli stuffed with Australian red snapper and burrata cheese served with aurora sauce, dehydrated leek and caviar. Creamy with a decent tang of squid ink, the chewy pasta contains a flaky fish filling and goes well with the salty caviar and crunchy slivers of leek.

Surf and turf

Prego Valentine - Boston Lobster Gratin with Fresh Italian Herbs, Porcini Mushrooms Sauce and Slow-Cooked Beef Cheek.jpg - lobster gratin and beef cheek

The next two courses arrive together like a surf and turf combo and is once again designed to be shared with your significant other. Boston lobster gratin with fresh Italian herbs and porcini mushrooms gets paired together with slow cooked beef cheek to make for a hearty mix of both worlds. Served with sautéed artichokes, truffle scented red desire potato mash, braised red cabbage and glazed pear pearls, the dish acts as the climax of the meal.

The slow-cooked beef cheek was soft and easy to chew, having that essential melt-in-your-mouth quality that is much sought after when slow cooking good cuts. Take forkfuls with the red cabbage to get a nice flavour and texture mixture, with a spoonful of the truffle scented mash to really make your bites truly gratifying.

Sweet ending

Prego Valentine - Semi Frozen White Chocolate Cream, Osmanthus Jelly & Lychee Compote.JPG - compote dessert

When it comes to dessert, some couples will be happy to know that both individuals will get their own share of sweets to end the meal with. Semi-frozen white chocolate cream, osmanthus jelly and lychee compote served in the shape of a crescent moon make for an interesting offering. Cold, slightly chewy and marshmallow-like, the white chocolate cream log isn’t too sweet and when taken with the lychee compote and raspberries makes for a great ending to a lavish meal.
