Chef Wai of The Library at The Ritz-Carlton, Kuala Lumpur and Chef Machi of Yukibana at Shook!, The Starhill Dining join forces to present an exquisite tasting menu

Trained under a Japanese chef specialising in kaiseki, Chef Machi is usually stationed at the newly renovated sushi bar at Yukibana in Shook!, whereas The Library can be considered Chef Wai's second home. But from now until May 13, 2021, both chefs will cook side by side at The Library to present Two Friends - One Cuisine, an exclusive tasting menu featuring each of their specialities.

Our night begins with freshly-cut prosciutto and crusty bread, which is soon followed by velvety sea urchin, which sits delicately atop buttery, charred brioche. Chef Wai kindly explains how the Amera Tomato Water beside the uni is made by distilling Japanese Amera tomato consommé. Though completely transparent, the clear liquid carries an abundance of flavour.

Next comes the Hokkaido Snow Crab Chawanmushi, our personal favourite. House-made chicken stock replaces dashi and carries a charming sweetness. The dish is full of texture and flavour. The crunch from five-coloured rice crisps served with the delicate Hokkaido snow crab meat is highly welcomed.

Coming to the mains: if you love seafood, order the fork-tender Japanese Olive Flounder rolled with prawns, served with bean ragout, and surrounded by a potent lobster reduction, which I mop up enthusiastically.

I can't help but sneak a bite of my plus one’s main: the Rack of Lamb is served with succulently sweet Japanese eggplant, pan-roasted Hokkaido bamboo sprouts and an intensely savoury shiro miso sauce.

Above Green Tea Mont Blanc

Dessert comes in the form of an elegant Green Tea Mont Blanc paired with adzuki ice cream. Indulgent layers of adzuki beans are perfectly positioned in a crisp tart shell, below silky piped matcha cream.

Each of the above dishes is paired with wine or sake, of which there is a wide selection at The Library. Do experience Two Friends - One Cuisine before the end of its short run on May 13, 2021.
