He is barely in his 30s but, Lim Kian Chun, the chief executive officer (CEO) and co-founder of Ebb & Flow Group, is already making his mark in the local dining scene. His name may not ring a bell but you have probably heard of or even dined at one of his many dining concepts.

Founded in 2016, the local food and beverage group has successfully launched multiple successful F&B concepts around the island, including one-Michelin-starred Willow, cafe and bakery Tigerlily Patisserie, and heritage kopitiam Chin Mee Chin—and it’s all thanks to the young entrepreneur and his team.

In this ever-changing dining scene, Lim has noticed how Singapore’s diners have become increasingly discerning about the food they consume. “There is a growing desire to learn more about the provenance of our food and the numerous people and processes that are involved in getting it onto your plate,” he explains.

As a result, Lim consistently introduces new concepts and reworks supply chains to satisfy changing consumer needs. For example, the brand now partners only with producers who follow an ethos of ethical farming. These producers will soon even be featured in the group’s upcoming concept, slated to open at Mondrian Singapore Duxton later this year.

Swedish celebrity chef Bjorn Frantzén brings back 1910s to 1930s Paris experience at Brasserie Astoria.

Parisian brasseries in the 1910s and 1930s were a sight to behold. Known for being the venue where artists, writers, and intellectuals gathered in the City of Light, these spaces often sported art deco-inspired interior designs with ornate mirrors and decorative lighting fixtures, and served classic French dishes with a side of showmanship—think flambé trolleys and personable tableside service.

“Wouldn’t it be nice to bring back this type of craftsmanship?” asked Swedish celebrity chef Bjorn Frantzén, the chef-owner of three-Michelin-starred Zén. The chef, who was in Singapore recently, also noted that this level of personable service is nowadays mostly confined to fine dining restaurants. That’s exactly what he wanted to revive at Brasserie Astoria, his more casual dining concept that opened its doors at the Victoria Concert Hall in July. It’s the first overseas offshoot of its sister restaurant in Stockholm, Sweden, which opened in 2021.

Helming the kitchen is Zén alum Emil Cecil Ess, who spent four months in its flagship outlet in Sweden to understand the intricacies of the food and tableside service. Working with the core culinary team, including Frantzén and Zén executive chef Tristin Farmer, they curated an extensive menu comprising Brasserie Astoria classics “designed to interact with our guests”.

On all of Claudia Poh’s designs, fabric cascades elegantly over the wearer’s body, cutting both classic silhouettes and stylishly placed asymmetrical drapes. Look more closely and you’ll find a magnetic belt there, or a ring-shaped zipper here—unusual touches that are less ornamental and more purposeful.

In 2020, Poh founded Werable, a Singaporean adaptive fashion brand that creates clothes designed to accommodate the needs of people with various physical disabilities. The brand offers ready-to-wear pieces and custom garments which are painstakingly designed with a universal matrix, prioritising, among other things, identity and grace, stability and safety, and comfort.

“Everyone deserves to own beautiful things,” she says. Indeed, Poh’s clothes are not just for people with disabilities or even those with mobility issues, but for anyone who wants to wear elegant clothes with accessibility built into its design. It is this focus on inclusivity and continuous innovation that makes Poh such an exciting designer to watch, as she seamlessly melds today’s discourse around accessibility with the unique expression and beauty that fashion can bring.
