Gallery by Chele’s new tasting menu is one of their strongest to date
There was something different in the air as we stepped into Gallery by Chele, ready to try their new menu, The Unknown Faces of Cacao. The team at the restaurant, from front of house to the chefs in the kitchen, seemed to be re-invigorated. A palpable sense of excitement buzzed through the room. While Gallery by Chele has always been known for its extensive R&D department and desire to push boundaries or broach new territories of cuisine, this menu certainly felt like it re-ignited something within the team. The cacao menu is not focused on chocolate; instead, the tropical fruit is taken apart and put under the microscope. Each dish is intellectual and well thought through, taking inspiration from cacao’s farming and production process, plus the fruit’s many byproducts. From the cacao bean, meat, mucilage, to skin, and cascaras—the degustation takes us on a fascinating, tasty journey.
