Sit down at any fine-dining restaurant in Hong Kong and chances are an alum of Amber, the Landmark Mandarin Oriental's flagship French restaurant, will have had a hand in crafting your dining experience, whether it be the food, wine or service. Such is its wide-ranging influence that Amber this week hosted a 16-hands dinner over three nights, bringing many of its Michelin-starred former chefs back to Hong Kong for a unique menu in celebration of its 18th anniversary. Ahead of the event, I spoke to Richard Ekkebus, the Landmark Mandarin Oriental's culinary director, on what it takes to become a hotbed of culinary talent in today's fast-changing world.
