These culinary maestros on Asia’s Most Influential 2023, are behind some of the finest dining establishments in the world. Lauded by the Michelin Guide and earning industry honours, these chefs have made it their mission to highlight local ingredients and traditional recipes and techniques, transforming raw ingredients into a harmony of flavours and visual presentation. Julien Royer, chef, Odette, Claudine (Singapore)

In 2023 Chef Julien Royer’s Odette was named The Best Restaurant in Asia by The World’s 50 Best Restaurants. The three-Michelin-starred French restaurant was named after Royer’s grandmother, who “showed me the potential of the purest ingredients”. See, for example, his guinea fowl paired with porcini mushrooms, fig purée and fermented apple purée. For Christmas, the restaurant offers Gourmandises de Noël, a trio of petit gâteaux (a hazelnut and chocolate délice, a tropical fruit brunoise, a classic Mont Blanc dessert) made by Odette’s cheffe pâtissière Louisa Lim, who is also Asia’s Best Pastry Chef 2023.

Richard Ekkebus, chef, Amber (Hong Kong)

Apart from helming the fine-dining French restaurant Amber for the past 18 years, chef Richard Ekkebus is also responsible for its recent pivot toward sustainability, an approach that now involves the ethical sourcing of animal proteins, buying from local producers and the elimination of dairy products. For his efforts, the two-Michelin-starred Amber was awarded a Michelin Green Star. This festive season, Amber offers exclusive menus for Christmas Eve and Day and New Year’s Eve and Day. Featuring the best of winter’s harvest, dinners are accompanied by a complimentary glass NV Armand de Brignac. Private dining rooms can also be reserved for more intimate celebrations.

Driven by a passion for cooking since childhood, Thitid Tassanakajoh embarked on his culinary journey, studying and working in various international restaurants. Eventually, he returned to Thailand and opened multiple restaurants, notable of which are Le Du and Nusara, establishments that secured the first and third rankings, respectively, in Asia’s 50 Best Restaurants 2023. Le Du, which means “season” in Thai, reflects the one-Michelin-starred restaurant’s focus on the freshest Thai ingredients, to which the chef then applies modern culinary techniques. To try: Asia’s Best lauds Le Du’s “khao kluk kapi of river prawn on a bed of brown rice risotto, enhanced by umami-rich shrimp paste”.

In November 2023, chef Chele Gonzalez celebrated the 10th anniversary of Gallery by Chele with a two-night feast starring ten of the best chefs in the world: Julien Royer of Odette, Virgilio Martínez of Central, Andoni Aduriz of Mugaritz, Josean Alija of Nerua Guggenheim, Jordy Navarra of Toyo Eatery, Margarita Forés of Cibo di Marghi and Bruce Ricketts of Mecha Uma. Continuing the celebrations into the holidays, Gallery now offers the Ten Year Journey menu, which features its greatest hits from the past 10 years such as Pearl (scallop, cashews, mustard leaves) and Sour Ribs (slow-cooked beef with soy sauce and calamansi).

In 2023, Taïrroir was awarded three stars by the Michelin Guide, becoming the first restaurant in the world to receive Michelin’s highest recognition for Taiwanese cuisine. Behind the Taipei restaurant’s success is chef Kai Ho, who captures the spirit of his homeland in every dish. The chef worked in the US, China and Singapore, mastering French cuisine along the way, before returning to Taiwan to shake up the scene. He presents dishes that consider the context of daily living while employing Taiwan’s seasonal ingredients. What to get? Michelin highlights Ho’s take on traditional porridge with pu’er tea-infused egg, fermented red yeast rice and edamame purée.
